My Gluten-Free Go-To

Luckily I live in a place where Mexican food is readily available. This is a good thing not only because Mexican food is delicious, but for the most part, it is gluten-free (salsa, guacamole, tacos, tamales, etc.). One of my favorite dishes is this one: carne asada street tacos, pinto beans and Spanish rice, made from scratch at a local haunt. Filling, bursting with flavor, this dish is always more than satisfying, and well-priced at $9.
